Strawberry Lemon Jello

Ingredients

  • 2 1/4 cups Strawberries (stems removed)

  • 1/2 Lemon (medium, juiced)

  • 2 tbsps Maple Syrup

  • 1/3 cup Water

  • 1 oz Gelatin

Directions

  1. Add the strawberries, lemon juice, maple syrup, and water to a blender and blend until smooth.

  2. Add about 1/4 of the strawberry purée into a small bowl and stir in the gelatin. Let it sit to bloom for at least five minutes.

  3. While the gelatin is blooming, add the remaining purée to a saucepan over low heat. Once little bubbles start to form on the top, stir in the bloomed gelatin until it melts and is smooth.

  4. Carefully divide the mixture into mini heatproof glass bowls or ramekins and refrigerate for one to two hours or until set. Serve and enjoy!

Notes

  • Leftovers: Refrigerate covered for up to five days.

  • Serving Size: One serving is approximately 1/3 cup.

  • No Mini Bowls: Use a square or rectangle glass container and cut into squares when ready to eat.

  • No Lemon: Use lime.
