Sunbutter Banana Roll Ups

Sunflower butter is a nut butter alternative made from sunflower seeds. It’s a great option for children who have a nut allergy, children who attend nut-free schools, or as a peanut butter substitute for children with a legume sensitivity (peanuts are actually legumes, not nuts!)

Sunflower seeds are a great addition to any nutrient-dense diet. Even if your child is not sensitive to nuts, give sunbutter a try! It contains sulfur-rich proteins with antibacterial and antifungal properties, to nourish a healthy gut. It does, however, have a strong sunflower seed flavor, so if your child just will not accept it after a few tries, feel free to use your favorite nut butter in this recipe. It’s still a great lunch or snack option! 

Ingredients

  • 4 Siete Tortillas (available to order in bulk here)

  • 8 tbsp sunflower butter (plain, or for a special treat, try chocolate!)

  • 2 bananas, ripe but not browned

Optional fillings: sprouted rice crispies (gluten-free but not grain-free), grain-free granola, chia seeds, shredded coconut, finely chopped pecans or hazelnuts, raisins, dried berry medley (sweetened with apple juice), strawberry jam 

“PB&J” Option: 4 Siete Tortillas, 8 tbsp plain sunbutter, 8 tbsp strawberry jam, 2 bananas. Top each tortilla with 2 tbsp sunbutter, 2 tbsp strawberry jam, and ½ a sliced banana. Roll up and enjoy!

Bonus Dessert Option: 4 Siete Tortillas, 8 tbsp chocolate sun butter, 12 thinly sliced strawberries, 8 tsp mini chocolate chips. Top each tortilla with 2 tbsp chocolate sun butter, 3 thinly sliced strawberries, and 2 tsp mini chocolate chips. Roll up and enjoy!

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. On each tortilla, spread about 2 tbsp of sunflower butter in a stripe down the middle of the tortilla* (no need to get measuring spoons dirty, just get two big spoonfuls out of the jar!) 

  2. Slice the bananas and place half a sliced banana into each wrap, on the sunbutter stripe.

  3. Add any desired fillings. Roll up and enjoy! For a fun presentation, slice the rollups and poke a toothpick into each slice. 

  1. *Hint: When you roll up the wrap, also place a dab of sunbutter on the edge of the tortilla, to act as “glue” that will keep the wrap from unrolling!
