Ingredients

  • 3 Banana (medium, ripe)

  • 1 1/4 cups All Purpose Gluten-Free Flour

  • 1/2 cup Coconut Sugar

  • 1/2 tsp Sea Salt

  • 1/3 cup Coconut Oil

If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Add the bananas, flour, coconut sugar, and sea salt to a blend or food processor. Blend on high for two to three minutes, tampering as needed, until a smooth consistency is achieved.

  2. Add the coconut oil to a pan over medium heat. Once melted, scoop 1/3 cup of batter into the hot coconut oil. Flatten out with a spatula until an even, three-inch patty is formed. Cook for two to three minutes on each side, or until browned and crispy. Set aside on a paper towel.

  3. Repeat until all of the batter is used up. Enjoy!

Notes

  • Leftovers

    • Refrigerate in an airtight container for up to five days. Freeze for up to three months. Reheat in the oven or toaster.

  • Serving Size

    • One serving is equal to one fritter.

  • More Flavor

    • Add cinnamon or cacao.

  • No Gluten-Free Flour

    • Use whole wheat or all purpose flour instead.
