Our Air Fryer Crispy Mini Potatoes recipe is great for kids with autism because it’s a healthier alternative to french fries! They’ll still get a crisp delicious potato with the added benefit of fiber minus the additional fat from frying.

The benefit of eating potatoes with the skin on is the fiber. Boosting your child’s fiber can help prevent constipation. This recipe features mini potatoes, extra virgin olive oil which are a great source of potassium, unsaturated fats and can help reduce the risk of cardiovascular disease and support brain health.

This recipe is highly customizable! You can add more flavor with the suggestions listed in the notes and choose your favorite toppings to spruce things up.

Ingredients

  • 4 cups Mini Potatoes (halved)

  • 1 tbsp Extra Virgin Olive Oil

  • 1/2 tsp Garlic Powder

  • Sea Salt & Black Pepper (to taste)

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Preheat the air fryer to 400ºF (205ºC).

  2. Add the potatoes, oil, garlic powder, salt, and pepper to a large bowl. Toss to coat and combine.

  3. Transfer to the air fryer and cook for 10 minutes. Shake the basket and cook for eight to ten minutes longer, until the potatoes are crispy and cooked through. Divide the potatoes onto plates and enjoy!

Notes

  • Leftovers

    • Refrigerate in an airtight container for up to three days.

  • Serving Size

    • One serving is one cup of potatoes.

  • More Flavor

    • Add smoked paprika, cajun seasoning, or another spice blend.

  • Additional Topping

    • Top with chives, parsley, lemon juice, and/or feta cheese.
