Ingredients
1 lemon
1 cup of almond flour
¼ cup of maple syrup

Citrus zester or cheese grater
Lemon squeezer
Mixing bowl
Baking sheet
Directions
Zest and juice 1 lemon
Combine almond flour, maple syrup, zest and lemon juice in a bowl. Stir by hand well.
Form dough into a ball and wrap. Freeze the dough for 10 minutes.
While the dough is in the freezer, preheat the oven to 350 degrees.
Scoop dough into about 12 small balls.
Press with a fork a criss-cross pattern for each cookie.
Bake for 9-12 minutes
Let the cookies cool down and enjoy!
