Crispy Smashed Brussel Sprouts

Our Crispy Smashed Brussel Sprouts recipe is great kids with autism because it is packed with a lot of common nutrients that kids with autism could be missing from picky eating or other feeding difficulties.

Crispy Smashed Brussel Sprouts are a good source of fat and fiber. Adequate fiber is helpful for kiddos struggling with constipation. This recipe features brussel sprouts and olive oil, which are a great source of mono/polyunsaturated fats, iron, choline, potassium, magnesium and can support brain development, bone health and fatigue.

To make things interesting you can serve these with a favorite dipping sauce!

Ingredients

  • 2 cups Brussel Sprouts (trimmed, outer leaves peeled)

  • 1 tbsp Extra Virgin Olive Oil

  • Sea Salt & Black Pepper (to taste)

Directions

  1. Preheat the oven to 425ºF (220ºC).

  2. Bring a large pot of water to a boil. Add the Brussels sprouts and boil for 10 minutes or until fork tender. Drain and transfer to a baking sheet.

  3. Using the bottom of a mug or jar, smash the Brussels sprouts. Drizzle with olive oil and season with salt and pepper. Cook for 20 minutes or until crispy and browned. Divide onto plates and enjoy!

  • Leftovers

    • Refrigerate in an airtight container for up to three days.

  • Serving Size

    • One serving equals approximately one cup.

  • Additional Toppings

    • Serve with a dip of your choice.
