Nut-Free Energy Bites
Nut-Free Energy Bites are a great snack that contains protein, fiber, and fats to offer your child a balanced and nutritious snack. The bites also include a variety of nutrients from ingredients like sunflower seeds, ground flax, and oats including brain-healthy omega-3s, magnesium, B vitamins, zinc, and iron.
These energy bites are easy to prepare ahead of time and pop in your child’s school lunch or as a quick after-school snack. Ever notice your child has behaviors mid-morning or mid-afternoon? It could be a blood sugar drop! These energy bites can be a great snack to help balance blood sugars and keep your child satiated.
Ingredients
1 cup quick oats
1/2 cup sunflower seed butter

1/3 cup ground flax
1/4 cup maple syrup
2 tbsp sunflower seeds
Optional Boosters:
Want an extra omega-3 boost? Add 1 tbsp chia or hemp seeds
Need a protein boost? Add 1 scoop collagen powder or other protein powder
Love chocolate and antioxidants? Add 1 tsp cacao powder

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.
Directions
In a large bowl, stir together the oats and ground flax. If using any “boosters”, add in at this time.
Add sunflower butter and maple syrup and stir to combine.
Finally, add sunflower seeds and chocolate chips.
If the dough is too dry, add a splash of maple syrup. You want it to be able to stick together well to hold as a ball shape.
Use a tablespoon or a small cookie scoop to form dough balls. Roll between your hands to smooth and transfer to a glass storage container and store in the refrigerator.
