Crispy chickpeas are a great source of protein and fiber, and deliver a delicious crunch that many kids love! Chickpeas naturally include a variety of nutrients including folate, iron, manganese, and copper. For kids that have a sensory preference for “crunchy”, this is a great snack to try to increase their nutrient intake. Since one serving of this recipe contains 6 grams of fiber, this is a great meal for kids struggling with constipation.

The great thing about this recipe is that it is highly customizable! You can add a variety of spices including smoked paprika, chili powder, curry powder, turmeric, etc. that appeal to your child’s sensory preferences and nutritional needs.

Ingredients

  • 1 can chickpeas (garbanzo beans), drained and rinsed

    • If cooking from scratch, use 1.5 cups cooked chickpeas

  • Avocado oil spray

  • Optional: Smoked paprika, curry powder, or other spices

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Preheat oven to 425°F and line a large baking sheet with unbleached parchment paper.

  2. Rinse the chickpeas and spread them on a kitchen towel and pat them dry. Remove any loose skins.

  3. Transfer the dried chickpeas to the baking sheet and spray with avocado oil and sprinkle with generous pinches of salt.

  4. Roast the chickpeas for 25 to 35 minutes, or until golden brown and crisp.

  5. Remove from the oven and toss with pinches of your favorite spices, if using, while they are still warm

  6. Store roasted chickpeas in a loosely covered container at room temperature. Use within 2 days.
