Cozy Shredded Beef & Macaroni
Ingredients
1 tbsp Extra Virgin Olive Oil
1 1/2 lbs Chuck Roast (boneless, cut into chunks)
Sea Salt & Black Pepper (to taste)
1 Yellow Onion (medium, diced)
2 Carrots (medium, diced)
2 tbsps Tomato Paste
2 tsps Italian Seasoning
2 cups Beef Broth (plus more if needed)
2 cups Macaroni (dry)
1/4 cup Parsley (chopped)
Directions
Heat the oil in a pot over medium-high heat. Season the beef chunks with salt and pepper, then sear for ten minutes, rotating until browned on all sides.
Add the onion and carrot and cook for another five minutes. Add the tomato paste, Italian seasoning, and broth. Reduce the heat, cover with a lid, and simmer for 1 1/2 hours or until the beef is tender.
Remove the beef from the pot and shred it with two forks. Return the shredded beef to the pot, stir, and simmer for another 30 minutes. Add more broth as needed.
Meanwhile, cook the pasta according to the package directions.
Divide the pasta evenly between plates and top with the beef. Garnish with parsley and enjoy!
Notes
Leftovers: Refrigerate in an airtight container for up to three days.
Serving Size: One serving is approximately one cup of pasta and 2/3 cup of shredded beef.
More Flavor: Add garlic, thyme, and rosemary to the beef mixture.
Additional Toppings: Top with parmesan cheese.
