Almond Flour Chocolate Chunk Cookies
This recipe features almond flour, a superpowered flour rich in nutrients like protein, vitamin E, magnesium, and more. Almond flour is a great gluten-free alternative to regular flour, but it absorbs moisture differently than all-purpose flour, so avoid swapping it 1:1 in your favorite recipes; instead, be sure to find a recipe from a good source that uses almond flour on purpose - not as a substitution!
When shopping for this recipe, be sure to purchase almond flour, not almond meal. They are similar-looking products, but almond meal is coarser and includes the almond skins, so the final texture of your cookies won’t be the same. Almond flour is much finer, and makes lighter and fluffier baked goods than the almond meal. (Although almond meal is great for crusting chicken!)

Ingredients
2 cups almond flour (blanched)
1/4 cup softened dairy-free butter (my favorite: Miyokos)
3 tbsp maple syrup (can sub 2 tbsp organic molasses)
1/2 cup Enjoy Life Mega Chocolate Chunks
1/2 tsp baking powder
1 tsp pure vanilla extract
Optional: sprinkle of coarse sea salt on top

Directions
Preheat the oven to 350F. Line a large baking sheet with parchment paper and set aside.
In a large bowl, mix together almond flour and baking powder.
Add softened butter, molasses, and vanilla extract and mix by hand or with a stand mixer until combined. Fold in chocolate chunks with a rubber spatula.
Use a tablespoon to form 12 small balls of cookie dough. Use a fork or the bottom of a glass to press down into a cookie shape
Bake the cookies for 10-12 minutes, until they start to brown around the edges
Remove from the oven and let cool on the baking sheet for 10 minutes before consuming
Sprinkle with coarse sea salt if you like a salty/sweet combo!
