Cauliflower is an incredibly versatile vegetable that often takes on the taste of whatever it is seasoned with. In addition to being a source of fiber, choline, and folate; cauliflower contains sulforaphane. Sulforaphane has been shown to help reduce inflammation, oxidative stress, and promote detoxification in children with autism.

Cauliflower rice is a great side dish to add to any meal in substitution for rice to increase fiber and reduce carbohydrate intake. 1 cup of cauliflower rice has 30 calories, 6 grams of protein, 4 grams of fiber, and 8 grams of carbohydrates. In contrast, 1 cup of white rice has 180 calories, 5 grams of protein, 0 grams of fiber, and 41 grams of carbohydrates.

Try this highly versatile cauliflower rice recipe and use it in any recipe you’d use with regular rice (stir fry, fried rice, curries, etc.) or by itself!   • 1 large head cauliflower

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. If making cauliflower rice from a head of cauliflower, proceed to step 2. If cooking from pre-riced fresh/frozen cauliflower rice, skip to step 4.

  2. Wash and thoroughly dry the head of cauliflower and remove all greens

  3. Cut into small pieces and place in a food processor with the grater attachment to process into rice. You can also use a box grater to rice the cauliflower by hand

  4. Pour the cauliflower rice into a large skillet in 1 Tbsp oil and sauté over medium heat, covered. If using turmeric to flavor, add at this time. Cook for 6-8 minutes and season accordingly at the end

  5. Store in the refrigerator for up to 5 days or in the freezer for up to 30 days!
