Carrot Cake Bites
Our Carrot Cake Bites recipe is a great way for kids with autism to get involved in the kitchen by pouring ingredients, mixing, and touching. This can also be a way to introduce a nutrient-dense vegetable like carrots to your child. Introducing foods in a fun way such as this can be helpful for picky eaters!
Carrot Cake Bites are a good source of fat and fiber. Combining these nutrients help keep your child full and nourished until the next meal/snack. The additional fiber will also help kiddos struggling with constipation. This recipe features carrots, coconut, which are a great source of vitamin A, medium-chain triglycerides (MCTs), potassium, iron, zinc, copper and can promote good eye health, cognitive function, weight management and help reduce iron-deficiency.
Ingredients
1/2 cup Coconut Flour
1/2 cup Vanilla Protein Powder (choose your favorite!)
1 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp Sea Salt
1/4 cup Maple Syrup
1/2 tsp Vanilla Extract (alcohol-free)
1/4 cup Coconut Oil (melted)
3/4 cup Unsweetened Shredded Coconut (divided)
1 cup Grated Carrot

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.
Directions
In a bowl, add the coconut flour, protein powder, cinnamon, nutmeg, and salt. Stir to combine.
Add the maple syrup, vanilla, and melted coconut and stir again.
Fold in a quarter of the shredded coconut and all of the grated carrot.
Form into even balls with your hands, approximately one inch in diameter. Add the remaining shredded coconut to a plate for rolling. If the batter is too sticky, add some more coconut flour.
Place in a sealed container in the fridge for about 20 minutes to slightly harden. Enjoy!

Leftovers
Refrigerate in an airtight container for up to one week or freeze for up to three months.
