Mornings are often stressful with the shuffle of getting ready for school and eating a nutritious breakfast to set your child up for success for the day. This recipe is a great option for days where pulling together a multiple-ingredient recipe seems too overwhelming. The night before, prepare your sweet potato, and in the morning, mix with eggs and put in a waffle maker. You easily have a nutritious recipe that kids love!

These can be very versatile with a wide variety of toppings to be sweet or savory and meet your child’s nutritional and sensory needs. Sweet potato waffles are a great way to add some extra fiber, protein, and vitamin A to your child’s diet to start the day off right!

Ingredients

  • 4 cups sweet potato ( mashed or pureed sweet potato)

  • 2 eggs

Materials

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. In a bowl whisk together sweet potato and eggs. ( You can also add 1 tsp of cinnamon to make them sweet or 1 tsp sea salt to make them savory)

  2. Heat waffle iron, then drizzle with olive oil to keep waffles from sticking. Cook waffles until golden and crispy ( takes about 5 minutes or more)

  3. Serve them with your favorite toppings. Enjoy!
